tesseract.pc.cmake was hardcoding libdir to
`{prefix}/lib`, which is wrong for systems that use
`/usr/lib64/` on 64-bit. `CMAKE_INSTALL_LIBDIR`
is already expected to contain the libdir path
relative to the install prefix.
This fixes linker errors in third-party software like tesserocr for builds
which use any of these libraries.

The tesseract/ subdirectory is no longer automatically added to the
include path of the compiler. Therefore old code which used code like
#include "capi.h"
must now change that to
#include "tesseract/capi.h"
This avoids name conflicts with header files from other projects.
